Banana walnut cake



Banana walnut cake is one of the most delicious cake and it look very yummy. One can use it on special occasions birthdays, Festivals, dinners etc.

To ease it complexity we have divided the ingredients and working into subparts each process has its own working and requirements.

Ingredients

 

v  Half cup of cooking oil

v  Around 2 cups of sugar

v  2 eggs, beaten

v  1 cup of bananas, brown is best

v  1 teaspoon of vanilla extract

v  1 teaspoon baking soda

v  2 teaspoons of baking powder

v  1/4 teaspoon salt

v  Half cup milks

v  1 cup chopped walnuts

v  1 cup of mixed sultanas (optional)

Ingredients for icing or frosting

v  1 cup of fresh milk or olpers milk pack

v  2 tablespoons of all-purpose flour

v  1 cup of sugar

v  Half cup of vegetable oil

v  1 teaspoon of vanilla extract

 

Preparation time: 2 hours

Working time: 1 ½ hours

 

Working

v  Take bowl have proper gloves take brush and wash it after washing brush the bowl with oil.

v  Heat the oven to 350F/180C

v  Take 2 cake tins and you need to spread butter with brush or with cooking spray.

v  Now in a bowl put 1/2 cup of vegetable oil and sugar (according to test) and 2 eggs and mix them together. You can use whisk or electric mixer it helps to mix yolks and white properly.

v  Now take bananas cut them properly then mash the bananas into the milk and vanilla and mix them. Take these ingredients and mix them together in a bowl remember that the darker and riper the bananas it will be good for banana cake because overripe bananas are sweeter and softer after done with mixing add them in to oil and egg mixture.

v  Take another bowl and now put flour, baking powder, baking soda and salt in it. Mix these dry powered ingredients and use t whisk to break up all clumps for perfect cakes you need to shift the flour in which perfectly breaks the clumps for a nice and smooth cake.

v  Add walnuts, sultanas or may be if you like to add chocolate chips are also wonderful addition.

 

v  Now you have two mixtures of ingredients dry and wet so now slowly add dry ingredients to wet ingredients mixing the entire time. If you have electric mixer this is your choice if you whisk or use electric mixer so if you have electric mixer turn it on low and slowly incorporate the flour mixture in your wet ingredient’s mixture adding the flour mix it till 80% and then put more dry mixture and mix it until all the dry ingredients are mixed with the wet.

v  Now full both pans with butter equally make sure that it is without air pockets. Fills the tins up and then bang the button of pans on countertop lightly which will shake out all air bubbles.

v  Bake for 35mints or until the cake looks golden brown as soon as you remove the cake let it cool for 5 to 6 minutes and turn them out onto wire racks to finish cooking completely.

Making of icing and frosting

v  Take a saucepan put one cup of milk 3 tablespoons of flour and 1/4 cups of sugar. Turn the heat on medium whisk everything and keep it moving and make sure everything is well dissolved.

v  Bring it to boil on medium heat keep eye on it and keep whisking its quick moving process so it should not take too long to cook.

v  Now add one teaspoon of vanilla extract and cut the heat and let it cool. Stir the icing completely as it cools now you don’t need to use vanilla extract here because bananas, almond and cocoa will go well here.

v  Take 1/2 cup of sugar and same quantity of vegetable oil as the mixture cools. Use electric mixer fast moving whisk to beat the sugar and oil together for more rich icing you can use 1/2 cup of butter.

v  Now combine the two mixture and beat until when milk and flour mixture is cool mix together at high speed until creamy. And slowly put it over the baked it cake.
