Greek Spinach Pie Recipe:



Greek spinach pie or Spanakopita is a traditional Greek pie. It is very easy to make and very delicious and simple dish. It can be used in dinner, lunch, weekend, holidays etc.

Ingredients

v  10 sheets of phyllo

v  120 ml of olive oil (1/2 Cups)

v  900 grams of spinach

v  4 chopped onions

v  1/4 bunch chopped parsley

v  1/4 bunch chopped Dill.350 grams of Cheese (Feta)

v  350 grams of cheese(ricotta)

v  Salt (as per taste)

v  Pepper (as per taste)

v  1/4 teaspoon of Nutmeg

v  1 teaspoon Dried oregano

v  Lemon test from one lemon

 

Preparation time: 1.5 hours

Working time: 25 minutes

 

 

Working

v  Before baking Heat, the oven to 180°C

v  Take a large pan, put two tablespoons of olive oil. Then add onion and heat them over medium heat until they turn golden brown. Now add spinach and cook it for 6-8 minutes over medium heat until the spinach gets wilted.

v  Take the extra liquid out (if there is any) and take a large bowl. Put the mixture in bowl, then add parsley, dill, lemon zest and spices etc. Cook and mix the mixture well to combine it.

v  Take a pan and wet it with olive oil. Now take a sheet of pastry and put it in the baking dish. Wet it with olive oil, then repeat the process and add 2 3 more sheets in the same way and make sure to put oil between layers.

v  Now pour spinach and cheese over phyllo crust. Now cover with three layer of phyllo sheets with olive oil. Fold the sides and make sure to wet them from top.

v  Use a sharp knife to cut pie into any shape i.e., rectangle

v  Bake the dish to around 45 minutes as it must turned to golden brown.

v  Turn off the heat and wait for at least 15 minutes before serving.

v  You can serve it with salad, Greek Salad, side dishes like Greek moussaka

 

Greek Moussaka Recipe 



Greek moussaka is a traditional Greek dish. It is a very delicious and yummy dish which is full of flavor. It is a great dish for parties, sides dishes, holidays, weekends etc.

Ingredients

v  3 large eggplants

v  1-2 onions chopped

v  3 potatoes

v  1 tomato (grinded recommended)

v  2 cloves of garlic

v  260 grams of tomato sauce

v  700 grams of minced beef

v  3 tablespoons of olive oil

v   ½ teaspoon of black pepper

v  1 teaspoon of thyme

v  ½ teaspoon of cinnamon

v  1L of milk (4 cups)

v  120 grams of Butter

v  120 grams of flour

v  ½ teaspoon of nutmeg

v  2 egg yolks

v  85 grams of parmesan cheese

v  1 bay leaf

v  1 teaspoon salt

 

Preparation time: 2 hours

Working time: 40 minutes

 

Working

v  Prepare the vegetables by slicing the eggplants into a cm, mixed it with salt and leave it for 30 minutes. Peel potatoes and slice them

v  Wash the salty eggplants and dry them. Take a large bowl and fry potatoes and eggplants in oil until they turn golden. Then take them out and take excess of oil from them with towel paper. Then put eggplants and potatoes in the baking pan, brush them with olive oil and bake them until it turns golden

v  Put olive oil in a large pan and heat the oil. Now add onions and cook them for 4-5 minute. Add garlic and cook and combine it for 2 minutes.

v  Add meat in garlic and onion pan and cook it until meat leave the pink color. Now add salt, pepper, cinnamon, and thyme. Mix them well, add grinded potatoes bay leaf and tomato sauce and mixed it well. Lower the heat and wait until it gets thickens. Turn off the heat.

v  For bechamel sauce heat the milk. Take a saucepan, add butter heat it and add flour and mix them well until it gets smooth. Now slowly add milk and keep whisking the paste. Turn the heat off and add pinch of salt, nutmeg, egg yolks, black pepper, parmesan and mix them well until they get properly mixed and smooth.

v  Before baking heat, the oven to 180’C

v  Now for final assembling take meat mixture and add 4-5 minutes of bechamel sauce to the meat mixture and mix. Layer the potatoes in an ovenproof dish, layer half of eggplants. Now pour the meat mixture and spread it equally. Then add parmesan on top.

v  Bake it until it turns golden brown 40-50 minutes.

v  Cool it for 45 minutes and enjoy.
